100% Wheat Bread/ Pizza Dough
Makes 2 large pizzas or 2 small loaves of bread.
2 1/2 tsp yeast
3-4 c wheat flour
1 1/2 tsp butter or olive oil
1 1/2 tsp honey
1 1/2 tsp salt
1 1/2 cup + 2 tbls warm water
3 tbls gluten
Mix in order and add more flour for right consistency.
For Pizza:
They key to making a good pizza is a HOT oven! So that the pizza can cook fast!
Preheat your oven to 500* with your stone preheating as well. (Letting it preheat for at least 30 minutes an hour is best)
Let rise until double in size.
Divide dough into 2 balls.
Roll out your dough.
Cover a pizza paddle or flat rounded cookie sheet with corn meal.
Place dough on paddle/ sheet.
Brush the crust with olive oil (what will be exposed with no toppings).
Top your pizza; sauce, toppings, cheese.
Slide pizza onto hot stone, kept in oven. (If it does not slide well add more corn meal the next time.)
Bake pizza until cheese is browned... only about 10 minutes!
For Bread:
Kneed down and let rise in two small greased bread pans.
Cover and then double in size again.
Bake in a 350* oven
