Main Courses


Everyone has their own idea of a main course.  Some people love to dine in fancy restaurants and some people don't mind driving through the fast food restaurants.  I guess it depends on what is going on that evening as to what is served.


ROASTED CHICKEN

1 whole chicken

lots of carrots and potatoes, peeled or just cleaned real good

1 or 2 onions, cut up

seasoning, sprinkled generously on top of the chicken, we use OLD BAY

throw it all in a big roasting pot and bake 350 degrees for 1 hour if the chicken is thawed.  We love this very quick and yummy dinner.


This veggie soup is what we consider a main course at our house.  Thank God for the gardening season because almost all of these veggies were grown in our garden. Now, we don't have to mention how power packed with vitamins and nutrients this soup is!!!  You know you could can this soup and leave it sit on your pantry shelf and open it up in the dead of winter on a cold blustery night and have a wonderful treat!
